DIGEST THIS! A Virtual Screening with Chef Paddy Rawal, Chef at Raago-Go

SITE Santa Fe presents Chef Paddy Rawal’s Digest This! talk which chronicles his remarkable journey that led him from India to Santa Fe.

Paddy’s gourmet Indian restaurant, Raaga-Go, is working hard during this pandemic to create delicious Indian food to go. Paddy says, "This is my way of giving back to Santa Fe, by remaining open. SITE Santa Fe's Digest This! is an interdisciplinary series of public programs pairing "bite-sized" talks with a tasting prepared by a local chef. 2020 Digest This! programs invite local experts and innovative chefs to explore the immigrant or refugee experience through their own lives and/or the work they do in our community. Relating to the exhibition, Displaced: Contemporary Artists Confront the Global Refugee Crisis, Digest This! is made possible in part by the New Mexico Humanities Council.

Usually these sold-out events take place in our auditorium, but now that we are all at home, we are adapting our programs and working with individual Digest This! presenters to bring you great content online. SITE takes Digest This! experts and shares their knowledge via our online platforms.

Executive Chef Paddy Rawal grew up in a family of seven in Bombay (Mumbai) India. Seeing his mother spend so much time cooking prompted him to occasionally take over the kitchen. Who would have known this humble start would lead to such a renowned career as a chef? Paddy attended university and then culinary school to study the basics of culinary skills. Later, working with master chefs, he was able to create Indian foundation sauces such as korma, saffron and vindaloo, which remain his passion. To Paddy, herbs and spices have always been the key ingredients, as is clearly demonstrated in his creative and unique combinations. Chef Paddy's work as a chef in India, Egypt, London, Dubai and Australia, and the film industry has expanded his hospitality and culinary acumen. Rawal recently won a cooking competition against celebrity chef Bobby Flay on the Food Network episode of Beat Bobby Flay.
